Buckle
- Cake flour – 2 cups
- Baking powder – 1 tsp
- Salt – ½ tsp
- Butter, softened – 4 tbsp
- Sugar – ¾ cup
- Egg – 1
- Whole milk – ½ cup
- Vanilla extract – 1 tsp
- Fresh or frozen blueberries – 3 cups
- Sugar – ½ cup
- Cake flour – ⅓ cup
- Cinnamon – ½ tsp
- Cold butter, cubed – 4 tbsp
🍰 Instructions
- Preheat oven to 375°F (190°C) and grease a 9×9-inch (23×23 cm) baking dish.
- In a bowl, whisk together cake flour, baking powder, and salt.
- In another bowl, beat butter and sugar until fluffy. Add the egg and vanilla, mixing until smooth.
- Alternately add the flour mixture and milk to the butter mixture, mixing just until combined.
- Gently fold in blueberries, being careful not to crush them.
- Pour the batter evenly into the prepared pan.
- For the streusel, mix sugar, flour, cinnamon, and cubed butter until crumbly. Sprinkle evenly over the batter.
- Bake 35–40 minutes, or until a toothpick inserted in the center comes out clean.
